Eggplant Tomato Sauce

1 ½ pounds eggplant, about 2 large or 3 medium ¼ cup extra-virgin olive oil 3 large cloves garlic, minced ¼ tsp. crushed red pepper flakes 28 ounce can crushed tomatoes 1 teaspoon dried basil Salt and pepper to taste

Sautee the garlic and eggplant until eggplant is tender.

Stir in tomatoes and spices then simmer for 20 minutes.

Serve with pasta and enjoy!
