Jamaican Jerk Sauce

Sauce Fanatic

1 medium onion, coarsely chopped 3 medium scallions, chopped 2 Scotch bonnet chiles, chopped 3 garlic cloves, chopped ¼ cup brown sugar 1 tablespoon fresh ginger, grated 1 tablespoon five-spice powder 1 tablespoon coarsely ground pepper 2 teaspoons ground Jamaican allspice 1 teaspoon dried thyme 1 teaspoon freshly grated nutmeg 1 teaspoon salt ⅓ cup soy sauce 1 tablespoon vegetable oil

1. Add all ingredients to a food processor or blender. Cover and blend until smooth.

Transfer sauce to a jar, seal tightly and refrigerate for up to 1 week.

When ready to use, marinate meat for at least 2 hours.
