2 tablespoons olive oil 1 onion, diced 2 cloves garlic, minced or pressed 1 red bell pepper, stem and seeds removed and sliced thin 1 green bell pepper, stem and seeds removed and sliced thin 1 teaspoon dried oregano 1 teaspoon dried basil ¼ teaspoon red pepper flakes 2 tablespoons fresh parsley, chopped, plus more for garnish 28-ounce can crushed tomatoes

Heat the olive oil in a large skillet over medium heat. Cook the onions, garlic, and red and green peppers until the onions begin to turn translucent and the peppers begin to soften, being careful not to burn the garlic.

Stir in the oregano, basil, red pepper, and chopped parsley. Add the crushed tomatoes. Bring the mixture to a boil over medium heat, then reduce heat and allow to simmer for about 20 minutes.

Spoon over cooked steaks, chicken, or pork and garnish with freshly chopped parsley.
