Blueberry BBQ Sauce

2 tbsp olive oil 1 shallot, minced 2 cloves garlic, minded or pressed 2 cups blueberries, fresh or frozen ¾ cup ketchup ½ cup water ½ cup apple cider vinegar ½ cup light brown sugar, packed 1 tablespoon unsulphured molasses 1 teaspoon chili powder 1 teaspoon smoked paprika 1 teaspoon ground black pepper

In a medium-sized sauce heat oil and cook the shallot and garlic over medium-low heat until softened but not browned.

Add the remaining ingredients. Bring to a boil over medium-high heat, stirring constantly.

Reduce the heat to medium-low and simmer until the sauce has thickened, about 20 minutes
