Carrot Ginger Dressing

⅓ cup extra-virgin olive oil ½ cup rice vinegar 2 large carrots, peeled and roughly chopped 2-inch piece of ginger, peeled and roughly chopped 1 ½ tablespoons granulated sugar ¼ teaspoon salt, more to taste

Combine all ingredients in a blender and blend until smooth. Season with additional salt if desired.
