Dijon Mustard Sauce

¾ cup half & half 2 tablespoons Dijon mustard 1 tablespoon all-purpose flour ¼ teaspoon salt 2 tablespoons minced shallot 3 tablespoons unsalted butter

Combine half & half, Dijon mustard, flour and salt in 1-quart saucepan. Cook over medium heat, stirring constantly, 3-5 minutes or until the mixture begins to thicken. Do not boil.

Stir in shallot; remove from heat. Add butter, stirring constantly with whisk, until butter is melted and smooth.
