Hawaiian Teriyaki Sauce

1 cup low sodium soy sauce 1 cup brown sugar ¼ cup mirin 1 teaspoon finely grated ginger 1 large garlic clove, minced or grated

Combine the soy sauce, brown sugar, mirin, ginger, and garlic in a small saucepan. Bring to a boil then simmer for 10 minutes. Simmer longer if a thicker sauce is desired. Serve immediately over grilled or baked chicken.
