Cilantro Chimichurri Sauce is a flavorful Argentinian Sauce. It's packed with cilantro, parsley, and oregano and comes together in a few short minutes. Use it over beef, chicken, and seafood!
Add shallot, jalapeño, garlic, and red wine vinegar to the bowl of a food processor. Pulse, stopping to scrape down the sides once or twice, until finely minced.
Add salt, cilantro, parsley, and oregano. Pulse several times until herbs are finely chopped, but still have some texture to them, scraping down the sides as needed.
Add the oil and pulse just a couple of times until incorporated.
Store in an airtight container and refrigerate until ready to use. Will keep well refrigerated for up to 5 days.

Shallot: Yellow onion may be used instead. Dice 2-3 tablespoons.Red jalapeño: 1 tablespoon crushed red pepper can be used as a substitute.Makes about 1 1/4 cups.
