Avocado Mayo
Creamy avocado mayo that can be used in place of regular mayonnaise. It's simple to make, healthy, and vegan.

medium ripe avocado

teaspoons
white vinegar

teaspoons
lemon juice

teaspoon
onion powder

garlic powder

Instructions
Cut the avocado in half, remove the seed, and use a spoon to scoop the avocado flesh into a blender or food processor.
Add the vinegar, lemon juice, onion powder, garlic powder, salt, and 2 tablespoons of the oil.
Pulse on high until smooth and creamy. Blend in the last tablespoon of oil if you desire a creamier consistency.

Storage:
Keep avocado mayo stored in an airtight container for up to 4 days in the refrigerator.
Makes about 1/3 cup.
