Homemade Tzatziki sauce is so flavorful and made with just a few simple ingredients. This cucumber yogurt sauce is easy to make and tastes incredible as a dip or spread on gyros, pitas, or falafel!
Peel and halve the cucumber. Scrape out the seeds then shred using a box grater.
Toss the shredded cucumber with salt and set aside for 20 minutes.
Whisk together the yogurt, olive oil, dill, lemon juice, and garlic in a small bowl.
Working with one handful at a time, lightly squeeze the grated cucumber between your palms over the sink to remove excess moisture then add it to the yogurt mixture. Once all the cucumber has been added, stir well to combine.
Cover and refrigerate until chilled, about 1 hour or up to 2 days.
Notes
Garlic: The bite from the garlic will decrease the longer you refrigerate it.Makes about 1 cup.
