Ingredients
- 2 tablespoons aji amarillo paste
- 1 small shallot
- 2 cloves garlic
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup queso fresco
- 1 tablespoon tomato paste
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Add all ingredients to a blender or food processor and process until smooth.
- Season with salt and pepper, to taste. Transfer to a bowl and refrigerate until ready to serve.
- Serve as a dip or a topping for roasted veggies and/or meats.

- This sauce has a medium spice level but is toned down thanks to the mayo and sour cream.
- Aji Amarillo Paste is needed for the recipe. There are no substitutions!
- Ketchup can be used in place of tomato paste.
