This Carne Asada Marinade recipe is loaded with authentic Mexican flavor. It’s zesty from the fresh citrus juices and vibrant with fresh cilantro. Chipotle peppers add a lovely smokiness while soy sauce, garlic, brown sugar, chili powder, and cumin season it to perfection.

You’ll get the best flavor by allowing the meat to marinade for at least 4 hours before grilling. But if you can wait, an overnight marinade will yield the best results.

  1. Combine all the ingredients in a food processor.
  2. Process until cilantro and garlic are broken down.
  3. Place your steak in a resealable bag and pour the marinade over the top. Seal the bag and refrigerate for up to 24 hours.

  • Leave and stems of cilantro are fine to use. There’s a lot of flavor in the stems!
  • Allow the meat to marinate for at least 4 hours for it to soak up all the delicious flavor of the marinade.

  • ¾ cup orange juice
  • ¼ cup lime juice
  • 1 bunch fresh cilantro
  • 2 whole chipotle peppers, canned in adobo
  • ½ cup soy sauce
  • 4 cloves garlic
  • 2 tablespoons dark brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground black pepper
  • ½ cup olive oil



  • Place all ingredients in a blender and blend until smooth.
  • Pour marinade over 3 pounds of flank steak into an airtight container or resealable bag.
  • Marinate in the refrigerator for 4-24 hours before grilling.
