- Butter: Ghee is traditional, but we use butter for convenience. If you have ghee, you can use that instead.
- Onion and garlic: Add flavor and aromatics to the sauce.
- Spices: Cumin, salt, ginger, cayenne pepper, cinnamon, paprika, and turmeric add all the authentic Indian flavors.
- Tomato paste: This gets diluted with water but adds a ton of tomato flavor.
- Heavy cream: Adds a rich creaminess to the sauce.
- Sugar: Just a touch adds a little sweetness to the sauce.

- Melt the butter in a large saucepan. Add the onion and cook until translucent.
- Stir in the garlic, followed by all the spices, and cook until fragrant.
- Stir in the tomato paste and water, then bring to a boil. Reduce the heat to low and let simmer for 10 minutes.
- Stir in the heavy cream and sugar. Bring the sauce back to a simmer and cook until thickened.
- Serve with chicken, paneer, tofu, or veggies.

Tips For Success
- Make it spicy: Add more cayenne pepper, ½ teaspoon at a time, until the spice is at the level you desire.
- For a different twist, use coconut milk instead of heavy cream.
- You can make a lighter sauce with milk or sour cream instead of heavy cream.
- Tomato paste is my favorite for this recipe; however, you can use tomato sauce and omit the added water.
