We stumbled upon this amazing sweet pepper relish recipe one evening while trying to use up some fresh veggies before they went bad. Since then, we’ve made it on purpose more times than we can count! Itโ€™s become a staple on our hot dogs, and we’ve even tried it on fish tacos recently, talk about a game changer!

If you like spice, consider adding a couple of jalapeรฑos, because the rest of the ingredients are quite mild. For those picky eaters, the vibrant red peppers might just tempt them to take a bite!

  • Bell pepper: Use any variety you prefer or have on hand. We used red and yellow, but orange or even green will also work for this recipe.
  • Onion: Yellow or sweet Vidalia will work best.
  • Garlic: Use fresh garlic cloves that are minced or pressed. Steer clear of the jarred garlic; it lacks flavor.
  • Vinegar: We prefer to use white wine vinegar, but regular white vinegar will also work.
  • Sugar: Regular granulated sugar is used to add more sweetness to the relish.
  • Yellow mustard seeds: This adds a slight tang and yellow tint to the relish.
  • Salt

  1. Add all the ingredients to a medium-sized saucepan.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, until just barely any liquid remains.
  3. Transfer the relish to a jar and let it cool slightly.
  4. Cover and store in the refrigerator.

Tips For Success

  • This is not a canning recipe! The relish will only keep stored in a jar in the refrigerator for up to 2 weeks.
  • Make it spicy! Add 1 to 2 jalapenos if you want to have a sweet, spicy flavor.
  • We love to elevate our sweet pepper relish recipe with the bold flavors of onion and garlic! But feel free to switch things up and omit them if you prefer!

Ingredients

  • 3 large bell peppers, cored, seeded, and diced

  • 1 teaspoon salt

Instructions

  • Add all the ingredients to a medium saucepan and bring to a boil over medium heat, stirring occasionally until sugar is dissolved.
  • Reduce the heat to low and simmer for about 30-40 minutes, until little liquid remains.
  • Transfer the relish to a jar, let cool slightly, then cover and place in refrigerator until completely chilled. Store in refrigerator for up to 2 weeks.

  • Makes a little over 1 cup of relish.
