- Cut the top off the garlic and set it inside a piece of foil. Drizzle with olive oil and wrap the foil tightly around the bulb.
- Roast for 45 minutes. Allow the garlic to cool enough to handle, then squeeze the pulp from the skin into a food processor
- Add all the remaining ingredients to the food processor and blend until smooth.
- Cover tightly and refrigerate for a few hours to allow the flavors to meld together.
Tips For Success
- If sriracha isnโt available, donโt worry! Sambal oelek makes an excellent substitute and will still give you that perfect spicy punch.
- This recipe is vegetarian and can be easily transformed into a vegan delight by swapping regular mayo for your favorite vegan mayonnaise.
- Craving a little more heat in your aioli? Simply mix in extra Sriracha or sprinkle in โ to ยผ teaspoon of cayenne pepper for that perfect kick.

Ingredients
- 1 whole garlic head
- extra-virgin olive oil
- 1 cup mayonnaise
- 2 tablespoons Sriracha chili sauce
- 1 tablespoon fresh lime juice
- ยผ teaspoon salt
Instructions
- Preheat the oven to 425ยฐF.
- Slice off the top the head of garlic to expose some of the cloves inside. Place the head on a piece of foil. Drizzle with olive oil and wrap the foil to form a tight pouch around the garlic.
- Roast for 35-45 minutes, until the garlic is lightly browned and tender.
- Remove from oven and allow to cool. Squeeze the pulp from the skins.
- In a food processor, combine the roasted garlic, mayonnaise, sriracha, lime juice, salt. Pulse until well combined. Taste and adjust the seasoning if needed.
- Refrigerate to allow the flavors to meld together.
